Składniki:

Today, inspired by travels, I present to you a menu full of sun and valuable ingredients that will give you energy for the whole day!

Coconut cocktail with plums

Ingredients:

  • 400 g of coconut yogurt
  • 300 g of sweet and juicy plums
  • honey to taste
  • coconut shrims
  • 1 teaspoon of chia seeds

Wash plums, dry and remove seeds. Then pour the yogurt into the blender and add the plums. Blend the whole into a single liquid. Add honey to the taste and mix again. Put the cocktail topped with coconut flakes and chia seeds.

Vegan omelette

Ingredients:

  • 1/2 cup of chickpea flour
  • 1/2 tablespoon of nutritional yeast
  • 1/2 tablespoon cumin
  • 1 tablespoon salt
  • 1/2 tablespoon turmeric
  • 100g tofu
  • 125 ml of soy milk
  • 1 tablespoon of olive oil
  • 1 medium tomato
  • 1/4 red onion
  • 1/4 cup of fresh coriander
  • a small handful of rocket
  • 1/4 cup whole rinsed chickpeas
  • a sprinkle of sesame seeds

Start by mixing the chickpea flour, nutritional yeast, cumin, turmeric and salt in a bowl. Next, add the tofu and soy milk and whisk until you get a smooth and runny batter. Then let it sit for about 5 mins. Chop the tomato, onion and coriander into small chunks. Heat up the olive oil on a pan and add the batter. Remove the omelette from the pan and sprinkle with leafy greens, chickpeas and sesame seeds and serve.

Vegan cake with raspberry-currant foam

Ingredients for a cake:

  • 150 g of courgette
  • 100 ml of water
  • 150 g flour
  • 80 g sugar
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • 15 g cocoa
  • 40 ml of rapeseed oil

Ingredients for a foam:

  • 300 g raspberries
  • 2 handfuls of currants
  • 70 ml of soya milk
  • 150 g of soy yogurt
  • 4 tablespoons of sugar
  • 1 flat teaspoon agar agar

Adjust the oven to 200 degrees. Zucchini blend together with water to a smooth mass. Sift flour into a bowl, add all dry ingredients and mix. Add the oil to the zucchini, mix all the ingredients and pour into a dry mix. Again, thoroughly mix and pour the dough into a mold lined with baking paper. The cake bakes 25 minutes. During this time, prepare the foam. Put down a few raspberries and currants and the remaining fruits blend together with milk. Cut half of the mass into a pot and bring to a boil. When it starts bubbling we add sugar and agar. Mix thoroughly and cook for 6 minutes on low heat. Add yogurt to the rest of the fruit and mix the whole. Then remove the baked cake from the oven and cool. Rinse the raspberry foam from the heat and wait until it begins to thicken. Put fruits and mousse on the cooled cake. The foam can not spill to the sides. When the cake is cold, put them in the fridge for a minimum of 2 hours. Serve chilled.

Shrimps in oranges (portion for 2 people)

Ingredients:

  • 1 tablespoon of olive oil
  • 1 glass of orange juice
  • 1/2 glass of lemon juice
  • 5 cloves of garlic squeezed by the press
  • 1 tablespoon chopped red onion
  • 1 tablespoon chopped parsley
  • a pinch of cayenne pepper

  • 30 shrimps
  • 1 orange cut into wedges or slices
  • 1 lemon cut into wedges or slices

In a medium-sized bowl, mix olive oil, orange juice, lemon juice, onion, garlic, 2 tablespoons of parsley, cayenne pepper. Pour everything into a higher pan and simmer for about 8 minutes. Add shrimps, salt and pepper. Cover the pan and cook for a further 5 minutes. Finally, add the sliced ​​orange and heat the lemon for a second and sprinkle with the remaining parsley.
